Branzino in Crosta – Seabass in Rock salt crust
INGREDIENTS FOR 4 PEOPLE:
1 seabrim of about 1 kg with its scales still on
1 kg of sea salt
herbs (thyme,rosemary,marjoraine,sage etc.)
garlic
lemon
Wash the seabrim but do not remove its scales. Place all the herbs inside the fish together with the slices of lemon and some garlic. Lay some salt in a glass pan, place the fish in the salt and cover completely with the remaining salt. Cook in the oven at a very hot temperature until the top fin comes away easily.
Once cooked, remove the salt crust, take the skin off the fish and serve the fillets.
