So here it is: the wonderful Ada Catto, the historic chef of Osteria la Vedova and great friend of Cook in Venice. She shows Pasta Grannies how to prepare the perfect risotto with asparagus and shrimps in Venice.

Ada, who is currently helping Monica writing a book on Cicchetti, the original Venetian small snacks, is one of the best cooks in Venice. She was very happy to share her recipe with the team of Pasta Grannies and the worldwide web!

Rialto Market
Asparagus were right in season during the filming, which took place in May. It was quite obvious Ada will use them in her dish, since she only cooks with seasonal fresh ingredients.
We first went to the Rialto Market, her chosen shopping place for more than 40 years. After carefully selecting the best asparagus and the freshest shrimps, we then walked back to her place for a little demo on how a real Venetian Risotto should be cooked.
