An Italian Cake Recipe Idea from Cook In Venice.
The Torta Sabbiosa or Sand Cake is an original sweet specialty from Northern Italy.
It is a very delicate cake that resembles the classic Torta Paradiso (a very light Italian sponge cake).
Although by the name of the recipe the preparation may seem complex, it’s actually a very simple to prepare cake.
It’s a great dessert at any time of the day: it can be served for breakfast, as a dessert after a meal or as a snack accompanied by a nice glass of juice, or wine if you want to be naughty.
A very typical Venetian cake, a bit old fashioned but still very nice!
Torta Sabbiosa – Sand Cake
Ingredients:
200 gr of potato flour
200 gr of butter
200 gr of caster sugar
2 eggs (separated, whip the eggs white very firm)
25 gr baking powder
salt
icing sugar to decorate
Preparation
Line and flour a baking tin 22cm.
Beat the butter with the sugar for a while until pale and fluffy. Add the egg yolks, then the flour and the baking powder. and a pinch of salt. Add the beaten egg whites and mix well. Place the mixture in the tin and bake in the oven at 180 degrees (gas mark 4) for about 40 minutes. DO NOT OPEN THE OVEN DOOR for the first 30 minutes (the cake will go flat – believe me, it happens – been there, done that!!). Cook until golden and firm. To check if the cake is cooked, insert a toothpick in the centre of the cake all the way through and make sure it comes out clean and dry.
Take the cake out of the oven, let it cool, place it on a serving dish and dust with icing sugar.
